We eat gluten, gluten upsets the stomach, we pass gluten out the other end and that is the end of the story. Sounds simple, however it is not how it works.
Most gluten problems are not even gastrointestinal, they are neurological.
“Our finding…implies that the immune response triggered by sensitivity to glutne may find expression in organs other than the gut; and the central and peripheral nervous systems are particularly susceptible.”
Journal of Neurology, Neurosurgery, and Psychiatry 1997;63:770-775
“Patients with an enteropathy (disease of the intestinal tract) represent only a third of patients with neurological manifestations and gluten sensitivity.”
J Neurol Neurosurg Psychiatry, 2002;72:560-563

Gluten is a big problem in our day and age and there is more to it than most of us realize. Appropriate testing is the first place to start.
